Brussel Sprouts For The Festive Season

This recipe combines the sour taste of goats cheese with the sweetness of red onion and pomegranates to make your Christmas Brussel Sprouts a lot tastier.

This recipe combines nutritional powerhouses which feed our good gut bacteria, supports liver detoxification and increases our antioxidant consumption.

Brussel Sprouts are part of the cruciferous vegetable family which provide numerous health benefits. They contain glucosinolates which protect liver cells and produce glutathione (a potent antioxidant involved in liver detoxification). They also feed our good gut bacteria due to their high dietary fibre content. Brussel sprouts and red onions are both sulfur rich foods which reduce oxidative stress (an ageing process) and inflammation (a disease causing state). Pomegranates are rich in polyphenols which are a potent antioxidant and feed the good bacteria in our gut. Goats cheese contains probiotics which are the beneficial live bacteria we want living in our gut. This is a great addition to the festive season where we tend to over-indulge and our liver and gut microbiome needs more support,



Recipe

Ingredients
Serves 2

160g Brussel Sprouts
1 x red onion
1 x tbsp of goats cheese cubed
40g of pomegranate seeds / 1/2 a pomegranate
1 x tbsp of coconut oil

Method
1. Start by chopping the red onion into slices and halving the Brussel sprouts
2. Add the coconut oil to an oven dish and melt for 2 minutes in the oven.
3. Add the sprouts and red onion to the oven dish and coat in coconut oil. Place in the oven and cook for 40minutes at 200 degrees c.
4. When ready (the sprouts should be soft on the inside and crispy on the outside) remove from the oven and add the goats cheese to the dish.
5. Transfer into a serving bowl and stir in the pomegranates.
